It was 2018 when I first met Grace in Solomon Islands. She had a very small cocoa farm in Guadalcanal in Solomon Islands. She put so much love and care in her beans and sometimes she wakes up in the middle of the night to turn her beans! Although she was fairly new to cocoa farming, her beans were the one of the best we've tried in Solomon Islands. I bought a couple bags of her cocoa beans on the spot and paid her cash the next day after finding the ATM machine!
The chocolate have a woody walnut note upfront then develops to fruity creamy note. We also have a different fermentation batch coming up, so it will be very interesting to compare chocolates made from the same farm with different fermentation seasons. In the meantime, please enjoy this bar!
